Ingredients:

  •  1 3/4 cups gluten-free flour
  • 1 1/4 tsp Xantham gum
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup butter/margarine
  • 2/3 cup sugar
  • 2 eggs, beaten
  • 2 tbsp honey
  • 3 ripe bananas, mashed

Directions:

1. Lightly grease the walls of the crock pot, sprinkling a little of the gluten free flour on the sides as well.

2. Combine dry ingredients (except sugar) in a bowl. Set aside.

3. Mix butter with an electric mixer until fluffy. Add sugar, eggs, honey, and mashed bananas until the mixture is smooth.

4. Add flour to wet mixture.

5. Put in crock pot and cook on high for 1 hour 15 minutes to 1 hour and 30 minutes. Or, until a toothpick inserted in the center comes out clean.

6. Let cool and serve.
